Well, I don’t know about you, but on cold and rainy days like the ones we are having in Iceland at the moment, the only thing that really helps is a warm bowl of soup while you’re snuggled up in a blanket on the sofa.
Furthermore, Soups are soooooo easy to make and it is also the food where you can decide which new show to watch while it is boiling and the flavor evolving.
So what is needed:
Main Ingredients:
- 120ml Coconut Cream (I used the one from Santa María)
- 280g Carrot
- 370g Sweet Potatoes (I used half of a big one)
- 6g Capers (not needed, but it is naturally salty)
Spices:
- 1 tsp. Curry
- 1 tsp. Tumeric
- Pepper
- Chilli (as spicy as you like it)
- Ginger (makes it feel extra healthy, I would recommend max 50g)
- 1 Veggie Soup cube (not necessarily needed)
- I personally topped it with either Shrimps or Halloumi. It’s amazing to have fresh pepper on top and my personal highlight is to top it with pomegranate seeds since I love the combination of savory and sweet.
How to make it:
- Cut all the veggies, not necessary into small pieces and put them into a pot.
- Fill enough water to cover all the veggies, and let it simmer for like 25min until the veggies are soft. (ca. 500ml) If the water evaporated, put more into it.
- Shortly before you mix everything, put in most of the coconut creme and the capers, as well as the spices.
- We mix everything and let it boil again until you have a creamier consistency.
- Garnish it in a bowl with the toppings and enjoy.
